Breakfast Egg Tacos

I love watching the show Extreme Makeover, Weight Loss Edition.  Chris Powell has this amazing way of motivating people to shed off so much weight.  I picked up his book Choose To Lose:  The 7-Day Carb Cycle Solution, not to lose weight but instead to get ideas of healthy meals and exercising tips.

You will need two corn tortillas, tomatoes, Mrs. Dash Garlic and Herb, Salsa, Olive Oil for pan and egg whites.  Either use 4 egg whites or get a carton of All Whites.  I always feel guilty throwing away the egg yolk when I just need the egg whites.  So instead I use All Whites.

Add a drizzle of Extra Virgin Olive Oil to the pan.  Heat the pan on medium heat.

Scramble the egg whites and the corn tortillas at the same time.  Sprinkle Mrs. Dash on the egg whites.  Usually a dash or two is good but add more for a more robust flavor.

You can also take your corn tortilla and position them between the cups on the back of a muffin tin.  Then put them into a 450 degree oven for 3 – 5 minutes until nice and crispy.  I found this cool technique from bevcooks.com.

Crispy Taco Shells

Divide the eggs evenly between two corn tortillas.  Add some sliced tomatoes and salsa.

For a variety you can also top it off with avocado pieces for an additional yum flavor.

I have yet to find a corn tortilla that won’t break while I am eating it.  I eventually end up eating it with a spoon.  A suggestion would be to use two tortillas for each taco.  Or, use kitchen scissors and cut up the tortillas into pieces and just mix it in with the rest of the ingredients.

Breakfast Egg Tacos:

4 Egg Whites or 3/4 Cup of All Whites

2 Corn Tortillas (Warmed)

3 Slices or Chopped Tomatoes

1 – 2 Dash of Mrs. Dash Garlic and Herb

3 Tbsp Salsa

1/4 Avocado Pieces (Optional)

Drizzle of Extra Virgin Olive Oil for Cooking Egg Whites

  • Drizzle EVOO in a nonstick pan over medium heat.  Add egg whites and Mrs. Dash Garlic and Herb.  Stir until scrambled.
  • Warm up the tortillas either in a pan until pliable and warm or place the tortillas on a plate, covered with a damp paper towel.   Microwave for about 30 seconds, depending on your microwave.
  • Divide scrambled eggs on two tortillas.  Top with tomatoes, salsa and avocado in desired.
