Smooth and silky is the texture of this dairy free Coconut Avocado Smoothie.
Coconut milk, coconut water, avocado, frozen mango/pineapple, honey, lime juice and fresh basil is what you will need. To give it a sweeter taste increase the frozen mango or frozen pineapple to 1 1/2 cups instead of just 1 cup.
Finely chop one to two tablespoons of fresh basil. Using a high power blender such as the Vitamix will blend the chopped basil into your smoothie. Otherwise you might find pieces of basil floating around the smoothie if you are using a standard blender.
Scoop out the flesh of one avocado using a spoon. Avocados are an excellent source of fiber, folate and potassium.
Add all your ingredients into the Vitamix.
Coconut Avocado Smoothie2 Servings 1 Cup Coconut Water (Or more if you want a thinner texture) 1 Cup Coconut Milk (Carton, Not Canned) Juice of 1/2 Lime 1 – 2 Tbsp Fresh Chopped Basil 1 Tbsp Honey 1 Ripe Avocado (Seed Removed) 1 – 1 1/2 Cup Frozen Mango or Pineapple Cubes Dash of Salt 1/2 tsp Lime Zest (Optional for Garnish)
- Place all ingredients, except lime zest, into a blender container in the order listed.
- Blend until smooth. Add additional coconut water if the smoothie is too thick for your liking. Divide between 2 glasses and garnish with lime zest.
